I respect my client's privacy so the website URLs are hidden in the delivery image. I send before and after speed results with the URL visible before delivering the order.
Yes, I always work on by making a copy of the theme and publish that after optimization. The original theme remain unchanged as a backup. Kindly note that the report of what changes are made is not included but the theme backup will be there.
Shopify uses google pagespeed insights for the performance score. But it takes a few days to update that score after optimization and also sometimes it doesn't update. So I only use google pagespeed insights as its official google tool for checking website speed.
Its true that in some cases the speed checking tool shows a better score. But speed also improve for the real-time loading as well because of code cleaning of old apps and lazy loading etc.
